Unless you can provide newer steps to reproduce, this issue has been fixed some time ago I think.
Sorting on all columns in Process Transitions works fine too.

The only remaining fields that cannot be sorted are function
fields/related fields that are not marked as 'stored', and this is
already addressed in bug 629332, so I'm closing this one as Fixed.
