I have no idea whether there is an appropriate cmake flag, but as a 
quick hack you could probably comment out
line 85
set(DOLFIN_ENABLE_GMP OFF)
in the CMakeList.txt in your dolfin src path.
But I guess there is a more elegant way to activate or deactivate 
certain optional packages.
