pauled23 proposed the following answer:
This feature exists in 0.9.9 (possibly 0.9.8). You can start multiple caches by adding something like 
[cache:2]
list of ports

In carbon.conf then run:
carbon-cache start --instance=2

We run this in our prod environment.
