Oliver Bartley confirmed that the question is solved:
Ok, it seems like every time I ask a question on launchpad, my brain
suddenly comes up with a solution. Just make sure all the libs in
Sikuli-IDE.app end up in the same dir as sikuli-script.jar

Seems to work okay.
