RaiMan proposed the following answer:
I have added a solution, that allows to specify a different OCR
language.

if the specified xxx.traindata file is not present, the JVM will simply
crash showing the Tesseract file not found message.

It is in the repo, but the libs are not yet ready built for Windows
(only Mac now).
