RaiMan proposed the following answer:
run with -Dsikuli.Debug=3 on the java command to get more debug info
from SikuliX.

The problem is related to the exporting of native libs.
On Linux this is only the bundled libJXGrabKey.so.
The target folder is ~/.Sikulix/SikulixLibs

This folder must be writable in the Jenkins run environment.
