I fully understand your request.

... but looking back into the history:

- IMHO: 1.1.1 needs at least Java 7
- 1.1.0 should work with Java 6

The OCR/text features with the 1.1.x releases had many problems and did
not deliver good results in many cases.

Conclusion:
I cannot help due to lack of time and resources for digging back into the past.

If you really want to stick with your plans, you have to work with the sources:
https://github.com/RaiMan/SikuliX-2014

There you can find the releases 1.1.0 and 1.1.1.

And regarding Tesseract you have to dive into the gory details yourself.
