Well after hemming and howing and doing the install a bunch of times in
different ways I ended up going with an all Ubuntu (no Windows) install
using software based RAID-0. For anyone interested I wrote up a how-to at
the URL below as it was a tiny bit tricky since the Ubuntu 12.10 installer
has no support for software RAID at this time.

I also wrote a bit about the other installs and various considerations like
LVM striping versus mdadm RAID-0 and why I made the choices I did. I'm not
saying I got everything perfect but thought others might benefit from it.
