I too, bike all 4 seasons + on Zwift and many other outdoor sports, and
I can tell you the most-important aspect of gloves or mittens, is where
the seam that faces the wind is located across your fingers.

You don't want to have two "slices of bread" sewn around the perimeter
that you slip your hands into, because the seam is now directly facing
the wind, unless you're also layering the seams to prohibit wind to slip
into them. You can see the difference between 'expensive' consumer
gloves and proper arctic gloves in the way they put the fingers and
seams together around the hand.

On the other hand (no pun intended), you don't want something so
closed-cell, that your hands can't breathe, because then you're trapping
humidity and moisture in your mittens/gloves, and the last thing you
want is to slip your hand into a cold, wet mitten that doesn't breathe
and can't dry itself out. Look into some of the wicking fabrics that are
out there in your local EMS/North Face or similar sports/outdoor apparel
store for some ideas.

Off the top of my head, I'd be thinking of something like a QuadLock[0]
style system on the palm side of the mitten, which is attached to a
'shell' of a mitten, that you can slip a knitted/polypropaline/wool
mitten into and out of, much like the 'Moose Mitts'[1] you see
motorcyclists wearing in cold weather.
