To use a regular desktop, thatt is indeed all you need to do (also
terminating those applications, but I guess you have already rebooted
your pc by now, so that shouldn' t be any problem).

Regarding your multidesk question, one option would be to install
compiz, which has a little niftier support for multiple desks. Although
Gnome (installed by default) offers something similar,which you could
adjust the settings of by rightclicking on the switcher and setting the
number of desks, if I'm not mistaken.
