I tried a little bit and on my computer the {-}{-} helps, see the
following minimal example and the attachment:
\documentclass{ubuntu-manual}
\begin{document}
\userinput{--help} \userinput{{-}{-}help}
\marginnote{\userinput{--help} \userinput{{-}{-}help}}
\end{document}
I'm not sure, but is it possible that this is a problem with the
fonts? In my example I get two entries in the font section of the
properties dialog of evince:
- - LinLibertineO (TrueType (CID))
- - DejaVuSansMono-Bold (TrueType (CID))
In your document, which you provided here
http://dl.dropbox.com/u/1218248/ubuntu-manual-de-screen.pdf,
are some different entries. For the above mentioned font is it:
- - LinLibertineO-Identity-H (Type 1C (CID))
I hope, that helps a little bit, to solve the problem.
