Can you define "sideways" vs. "straight"? :)
On Ubuntu, we've decided (design reasons) to make the Nexus7 landscape
by default.
Unfortunately there's no option for this yet, but you can change it in
/etc/ubuntu-touch-session.d/flo.conf, note you'll need to put your
device into writable mode and potentially need to change it again once
in a while if the file changes or you get a full-image update.
