Weird, using atlas3-sse2-dev and setting ATLAS_DIR worked for me.

Try to set ATLAS_DIR instead of a symlink manually. The flag 
-L/usr/lib/atlas/sse2 is used when compiling the demos, if you have not 
set ATLAS_DIR this might not be the case?
