My simple answer to that is I trust Julien. He said Lubuntu 12.04 would
be supported for 18 months.

It's up to each individual to decide if they want to trust an off-shoot
like LXLE, I personally prefer not to.

Even Linux Mint bothers me in the way they handle kernel updates and
other security updates.

That said, if you installed Ubuntu 12.04 and then installed
"lubuntu-core" how would that effect security, it only installs these
packages;

Of course installing 'lubuntu-desktop' installs much more, but what
would the security implications be of installing only those minimal
packages?

I can't answer that question.
