By the way we came as well with a new polymorphic field idea that
is applied in this module.
Looks interesting. For the module above, I had to do something similar
but resorted to some hackish use of a many2one field with a fallback
to a reference field.

Wouldn't it be great to have web_polymorphic be a widget for reference
fields? Actually, it might just inherit from FieldReference and add
the flexibility on model choice you're after. And if the polymorphic
field also accepted ids of models in addition to their names, you'd
save yourself some helper fields in mail_organizer (and I guess most
modules using it). But well, let's better discuss that when you
propose it to web-addons.
This is indeed perfect for the reference field. It is not yet supporting ids but that could be a nice spinoff (for tags for example).
In this polymorphic field you can easily have domain for example.
We will send a MP on web-addons anyway.
