RaiMan proposed the following answer:
You have to use Tesseract features according to their docs (you surely need a separate Tesseract install). 
Then you have to incorporate your resource and config files into Sikuli's tessdata folder.

So it is nothing specific with Sikuli in the first step (which is surely
the biggest ;-)
