As far as I'm aware, most local *ubuntu users are already involved with some LUG or other UG in their area (or simply NZLUG).

May be worth-while posting something on those list to see what people are interrested in.

As for advocacy activities, Software Freedom Day is coming up in a few months again, so it may be worth-while getting ready for that & make a larger push.

In the shorter term, the effort around ACTA are coming up, so it may be worth-while lending that our support too.

AFAIK, anything involving beer will draw a crowd

As far as I know none of the existing members has been able to put any
energy into organising things. I think it would be great to
participate in the Ubuntu Global Jam; I'm also interested at some
point in getting more people (particularly fluent speakers) actively
involved in the Maori localisation effort.
