You can flash an older version using the ubuntu-device-flash tool but
before that lets try to find out why you are seeing issues as they are not
known. in fact it should be the opposite as a number of issues affecting
performance were fixed.
You could file a bug at
https://bugs.launchpad.net/canonical-devices-system-image/+filebug to
collect information.

The first time an app is launched we create a cache, so subsequent loads
will be much faster. I see under two secs for this app.
It could be some process is using CPU, if you could for example run the
"top" command in the terminal, and check for crash files in /var/crash.
