ChrisCS confirmed that the question is solved:
Thank you all for your help. I have now got it working again so if
anyone has a similar problem, this is what I did:
sudo dpkg-reconfigure -phigh xserver-xorg
and after re-booting it worked properly.
However, I ran Update Manager after that and noticed that it was
downloading something to do with nVidia, which I am sure was the cause
of the problem, so I am going to follow the steps that arochester
suggested and delete the monitors config file and, hopefully, the
problem will not recur
