Public bug reported:

On Purchase orders, field "Product" should not be a required field.

A feature available in all previous versions is that when you need to
request something that is not defined in your products catalog, you just
leave the "Product" field empty and fill the "Description".  V6.1 has
the field marked as required, so this feature is not available...

It is working as expected on invoices and sales orders...
