There is one difference, although it may well not matter to you.

If you upgrade to a newer version of Lubuntu and the lubuntu-desktop
package has changed (added to) the set of packages it points to, then
the upgrade will not "pull in" any such added packages unless you have
lubuntu-desktop present.

Since it appears that you are more interested in removing things than
adding them, this probably will not matter to you, but I thought I
should correct myself and mention it, just in case it does matter!
