This of \variable as simply a text-formatting command.  It does
nothing more than italicize its argument and wrap it with snazzy angle
brackets.  So each time you type \variable{text}, it will appear
(separately) in the .pot file [in the same manner that \textbf{text}
would].

I see now. I thought it was an implementation of variable functionality per se, so you could define the value once and use it throughout.
