ubuntu-touch means a completely different way of set up under the hood
(readonly system, app confinement, click packages instead of debs etc
etc) while you can indeed build Mir and unity8 from the source packages
or code trees, you will have a hard time to get Mir to work without
having certain features in your graphics drivers which are provided in
ubuntu-touch via libhybris and the android binary blobs.

hints how to run the GUI without any android ...
(for building from source the general "apt-get source ... " applies)
