So you have now the dir 'userdata' below ~phablet, this is perhaps not
what you wanted and you should delete this again;

you must change the dir to "/" before un-taring, use:

$ ssh phablet@192.168.0.41  tar -C / -xvzf - < userdata.tar.gz
