Is there any other distro you can boot with the USB, using only the
standard amd64 image? Maybe there's some sort of UEFI issue with USB.

What I mean is like hit up the forums or AskUbuntu or something and
find someone that actually has the hardware so they can confirm the
problem. It would be also good to find other Intel Mac users who can
refute your issue for their particular hardware, which will help
narrow down the affected machines.
Even still, if this is a problem that affects this particular
hardware, it will be a difficult problem to fix unless you can find a
developer that also has the same hardware, or that's familiar enough
with it to be able to figure out an appropriate solution.
